The definitive class on the preparation of fish including making fish selection; sustainability; techniques of fish cooking including: Pan-seared trout florentine (spinach, cream and cheese); Pan Grilled salt brined catfish tacos with roasted tomato salsa; Poached cod with black bean and garlic sauce; Filet of salmon en papillote with pickled shiitake mushrooms; tempura shrimp with tempura dipping sauce.
